Michele's Marzipan Squares
- Pastry for bottom of 8" square pan
- Raspberry jam
- ½ cup Butter or margarine
- 2/3 cup White sugar
- 2 Eggs
- 2/3 cup Rice flour
- ¼ tsp Salt
- Red & green food colouring
- 2 tbsp Butter or margarine
- 1 ½ cup Icing sugar
- 2 tbsp Warm milk
- 1 tsp Almond flavouring
Heat oven to 375 F.
Line bottom of 8” square pan with thin pastry.
Cover pastry with thin layer of raspberry jam.
Blend butter and sugar thoroughly.
Add eggs and beat until light and fluffy.
Add rice flour and salt and beat well.
Colour half of the mixture a pale green and the other half a pale pink.
Put small teaspoonsful of each mixture, alternately on jam, to cover.
Bake in 375 F oven for about 35 minutes.
Cool, and ice with almond frosting.
Cut into squares
